This vegan dish is perfect for lunch or dinner.

Ingredients

  • 1 Package ( 14 oz) firm tofo, drained and pressed

  • 2 tbsp soy sauce

  • 2 tsp fresh minced ginger

  • 1 cup vegetable broth, divided into two

  • 2 tbsp blace bean sauce

  • 1 tsp sweet chili sauce

  • 1 t tbsp corn starch

  • 2 tbsp vegetable oil

  • 1 green bell peppers ( cut medium dices)

  • 2 clove garlic minced

  • 1 1/2 cup broccoli flower

  • 1/4 cup fresh cilantro chopped (optional)

  • 2 cup hot steam rice

Directions

  • cut tofo into 3/4 cube. place in shallow dish, sprinkles with soy sauce and ginger.
  • stir together 1/2 cup broth, black beans, chili sauce, and corn starch in a small bowl and set aside.
  • Heat the oil into a wok over high heat. Add bell peppers and garlic, cook for 2 minutes. Add the remaining broth 1/2 cup and broccoli.
  • Bring to a boil and reduce the temperature to low. for about 3 minutes
  • Stir in the sauce mixture and into the wok. Cook for 1 minutes or until sauce is thickens. Add the tofo and simmer for 1 minutes more and then sprinkle with the cilantro. Serve with the steam hot rice

Ingredients

  • 2 slices whole-grain bread

  • 1 ripe avocado

  • ½ cup canned chickpeas (rinsed and mashed)

  • 1 tsp lemon juice

  • ½ tsp red pepper flakes

  • Salt & pepper to taste

Directions

  • Toast the bread.
  • Mash avocado with lemon juice, salt, and pepper.
  • Spread mashed chickpeas on toast and top with avocado.
  • Sprinkle red pepper flakes and serve.
